Delicious Cinnamon Roll Protein Crepes

  • 1/2 cup rolled oats
  • 1 scoop vanilla protein powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon baking powder
  • 1/2 cup unsweetened almond milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon cream cheese, softened
  • 1 tablespoon powdered sugar
  • 1/2 teaspoon unsweetened almond milk (for glaze)

Instructions

  1. Combine rolled oats, protein powder, cinnamon, and baking powder in a blender. Blend until a fine flour forms.
  2. Add almond milk, egg, and vanilla extract to the blender. Blend until smooth.
  3. Heat a lightly oiled griddle or frying pan over medium heat.
  4. Pour 1/4 cup of batter onto the hot griddle for each crepe.
  5. Cook for 2-3 minutes per side, or until golden brown.
  6. While the crepes are cooking, prepare the glaze. In a small bowl, combine softened cream cheese and powdered sugar until smooth. Add a little almond milk if needed to reach desired consistency.
  7. Spread the cream cheese glaze over the cooked crepes.
  8. Roll up the crepes and serve immediately.

Notes

For an extra touch of flavor, sprinkle a pinch of cinnamon on top of the glaze or add a swirl of sugar-free caramel sauce.
