  • ¼ cup brown sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
  6. In a small bowl, combine the ground cinnamon and brown sugar.
  7. Roll out the dough on a lightly floured surface into a rectangle about ¼ inch thick.
  8. Sprinkle the cinnamon-sugar mixture evenly over the dough.
  9. Carefully roll the dough into a log, then slice into ½-inch thick cookies.
  10. Place the cookies on the prepared baking sheet, spacing them about 2 inches apart.
  11. Bake for 12-15 minutes, until the edges are golden brown.
  12. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
