  • 6 slices bacon, cooked and crumbled
  • 1/2 cup butter
  • 1/2 cup all-purpose flour
  • 4 cups chicken broth
  • 1 cup milk
  • 1 cup heavy cream
  • 5 medium russet potatoes, peeled and cubed
  • 1 medium onion, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped fresh chives, for garnish
  • 1 cup shredded cheddar cheese, for garnish

Instructions

  1. In a large pot or Dutch oven, melt butter over medium heat. Whisk in flour until smooth. Cook for 1-2 minutes, stirring constantly.
  2. Gradually whisk in chicken broth until smooth. Add milk and heavy cream. Bring to a simmer, stirring occasionally.
  3. Add potatoes and onion to the pot. Season with salt and pepper.
  4. Reduce heat to low, cover, and simmer for 15-20 minutes, or until potatoes are tender.
  5. Use an immersion blender to partially blend the soup until desired consistency is reached. Alternatively, you can carefully transfer a portion of the soup to a regular blender and blend until smooth, then return to the pot.
  6. Stir in half of the crumbled bacon.
  7. Ladle soup into bowls and garnish with remaining bacon, chives, and cheddar cheese.
  8. Serve immediately.

Notes

For an extra smoky flavor, use smoked paprika in the soup. Serve with crusty bread or crackers for dipping.
