A Delicious Cornbread Casserole

This creamy and comforting cornbread casserole is a crowd-pleasing dish perfect for potlucks or a cozy family dinner. It combines the sweetness of corn with a savory custard base, creating a delightful texture and flavor.

  • 1 box (15 ounces) corn muffin mix
  • 1 can (15 ounces) creamed corn
  • 1 can (14.75 ounces) whole kernel corn, drained
  • 1 cup sour cream
  • 1/2 cup (1 stick) butter, melted
  • 2 large eggs, beaten
  • 1 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a large bowl, combine the corn muffin mix, creamed corn, drained whole kernel corn, sour cream, melted butter, and beaten eggs. Mix well until all ingredients are fully incorporated.
  3. Pour the mixture into the prepared baking dish.
  4. If desired, sprinkle the shredded cheddar cheese evenly over the top.
  5. Bake for 30-35 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  6. Let cool slightly before serving.

Notes

For a spicier kick, add a can of diced green chilies to the mixture. Leftovers can be stored in the refrigerator for up to 3 days.
