Fluffy and savory, these Cottage Cheese and Herb Biscuits combine creamy cottage cheese with fresh herbs for a deliciously tender biscuit perfect as a side or snack.

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/4 cup cold unsalted butter, cubed
  • 1 cup cottage cheese
  • 1/4 cup milk
  • 2 tablespoons fresh chives, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon fresh thyme leaves

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, salt, and baking soda.
  3. Add cold butter and use a pastry cutter or fingers to blend until mixture resembles coarse crumbs.
  4. Stir in the cottage cheese, milk, and chopped herbs until just combined; do not overmix.
  5. Turn dough onto a floured surface and gently pat into a 1-inch thick rectangle.
  6. Use a biscuit cutter or glass to cut out biscuits and place them on the prepared baking sheet.
  7. Bake for 12-15 minutes or until golden brown on top.
  8. Remove from oven and let cool slightly before serving.

Notes
