Cottage Cheese and Herb Biscuits

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1/4 cup cold unsalted butter, cut into small pieces
  • 1 cup cottage cheese
  • 1/4 cup buttermilk
  • 2 tablespoons chopped fresh chives
  • 2 tablespoons chopped fresh parsley
  • 1/2 teaspoon dried thyme

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  4. In a separate bowl, combine the cottage cheese, buttermilk, and fresh herbs.
  5. Add the wet ingredients to the dry ingredients and gently stir until just combined. Avoid overmixing to keep biscuits tender.
  6. Turn the dough out onto a lightly floured surface and pat it into a 1-inch thick rectangle.
  7. Using a biscuit cutter, cut out biscuits and place them on the prepared baking sheet.
  8. Bake for 12-15 minutes, or until golden brown on top.
  9. Remove from the oven and let cool slightly before serving.

Notes

For extra flavor, brush the tops with melted butter and sprinkle a pinch of sea salt before baking. Serve warm with honey or your favorite jam.
