Deliciously creamy and protein-packed, these Cottage Cheese Egg Bites make for a quick and healthy breakfast or snack option that’s easy to prepare and customizable.

  • 4 large eggs
  • 1/2 cup cottage cheese
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup chopped spinach
  • 1/4 cup diced bell peppers
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • Cooking spray or oil for greasing

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin with cooking spray.
  2. In a medium bowl, whisk together the eggs, cottage cheese, salt, pepper, and garlic powder until smooth.
  3. Fold in the shredded cheddar cheese, chopped spinach, and diced bell peppers.
  4. Pour the mixture evenly into the muffin tin cups, filling each about 3/4 full.
  5. Bake for 18-20 minutes, or until the egg bites are set and lightly golden on top.
  6. Allow to cool slightly before removing from the tin. Serve warm.
