  • 1/2 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup orange juice
  • 2 tablespoons lime juice
  • 2 tablespoons honey
  • 1/4 teaspoon salt
  • Pinch of black pepper

Instructions

  1. In a food processor, pulse the cranberries until coarsely chopped. Be careful not to over-process; you want some texture.
  2. Transfer the chopped cranberries to a medium bowl.
  3. Add the red onion, jalapeño, and cilantro to the bowl with the cranberries.
  4. In a small bowl, whisk together the orange juice, lime juice, honey, salt, and pepper.
  5. Pour the dressing over the cranberry mixture and stir well to combine.
  6. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. This step is crucial for the best flavor.
  7. Serve chilled with tortilla chips, crackers, or as a topping for grilled chicken or fish.

Notes

For a sweeter salsa, add a little more honey. For a spicier kick, leave some of the jalapeño seeds in. This salsa is also delicious served over cream cheese with crackers.
