  • 2 boneless, skinless chicken breasts
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup coconut milk
  • 2 packs ramen noodles (discard seasoning)
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon grated ginger
  • 2 green onions, sliced
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat and add minced garlic and ginger; sauté for about 1 minute until fragrant.
  2. Add chicken breasts to the skillet, season with salt and pepper, and cook until browned and cooked through, about 6-7 minutes per side.
  3. Remove chicken and shred or slice thinly.
  4. In a large pot, bring chicken broth and coconut milk to a simmer; stir in soy sauce and sesame oil.
  5. Add ramen noodles to the simmering broth and cook according to package instructions, about 3-4 minutes.
  6. Divide noodles and broth into bowls, top with shredded chicken and sliced green onions.
  7. Serve hot and enjoy your creamy, garlic-infused chicken ramen.

Notes

For extra richness, add a soft-boiled egg on top or a sprinkle of chili flakes for some heat.
