  • 8 ounces pasta (such as ditalini or small shells)
  • 4 cups chicken broth
  • 1 cup milk
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1/2 cup chopped carrots
  • 1/2 cup chopped celery
  • 1 teaspoon dried Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add onion, carrots, and celery and cook until softened, about 5 minutes.
  2. Add garlic and Italian seasoning and cook for 1 minute more, until fragrant.
  3. Pour in chicken broth and bring to a boil.
  4. Add pasta and cook according to package directions, or until al dente.
  5. Reduce heat to low and stir in milk and heavy cream.
  6. Season with salt and pepper to taste.
  7. Stir in Parmesan cheese until melted and well combined.
  8. Simmer for a few minutes to allow the flavors to meld.
  9. Serve hot, garnished with fresh parsley.

Notes

For a richer flavor, use homemade chicken broth. You can also add cooked chicken or vegetables for a heartier soup.
