  • 1 lb shrimp, peeled and deveined
  • 2 cups cooked rice
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup mayonnaise
  • 1/4 cup chopped green onions
  • 1 cup frozen peas, thawed
  • 1/2 cup bread crumbs
  • 2 tbsp butter, melted
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • Salt to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine sour cream, mayonnaise, shredded cheddar cheese, garlic powder, black pepper, paprika, and salt. Mix well.
  3. Add the cooked rice, thawed peas, chopped green onions, and shrimp to the mixture. Stir until well combined.
  4. Transfer the mixture to a greased casserole dish.
  5. In a small bowl, mix bread crumbs with melted butter. Sprinkle evenly over the casserole.
  6. Bake for 25-30 minutes until the top is golden brown and the casserole is heated through.
  7. Remove from oven and let rest for 5 minutes before serving.

Notes

For extra flavor, add a sprinkle of cayenne pepper or serve with a side of fresh green salad.
