  • 1 lb ground turkey
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1/2 cup shredded cheddar or Mexican blend cheese
  • Optional: lime wedges and sour cream for serving

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sauté until translucent, about 3 minutes.
  3. Add ground turkey to the skillet. Cook, breaking it apart with a spoon, until browned and cooked through, about 6–8 minutes.
  4. Stir in chili powder, cumin, smoked paprika, salt, and pepper. Cook for another minute to let the spices bloom.
  5. Add the black beans and stir to combine. Remove from heat.
  6. Spoon an equal amount of the turkey and black bean mixture onto each tortilla. Fold tacos in half and place on the prepared baking sheet.
  7. Sprinkle shredded cheese evenly over the tacos.
  8. Bake in the preheated oven for 10–12 minutes, until tacos are crispy and cheese is melted.
  9. Remove from oven and top with shredded lettuce, diced tomatoes, and cilantro.
  10. Serve immediately with lime wedges and sour cream if desired.

Notes

For extra crispiness, lightly brush the tortillas with olive oil before baking. You can also add avocado slices or a spicy salsa for more flavor.
