  • 2 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup olive oil
  • 2 hamburger buns, toasted
  • 1/4 cup Caesar dressing
  • 1 cup romaine lettuce, shredded
  • 1/4 cup Parmesan cheese, shredded

Instructions

  1. Place chicken breasts between two sheets of plastic wrap and pound to 1/2-inch thickness.
  2. In a shallow dish, combine flour, salt, and pepper. In another dish, place beaten eggs. In a third dish, place panko breadcrumbs.
  3. Dredge each chicken breast in flour, then dip in egg, and finally coat with panko breadcrumbs, pressing gently to adhere.
  4. Heat olive oil in a large skillet over medium heat.
  5. Carefully place chicken breasts in the hot oil and cook for 5-7 minutes per side, or until golden brown and cooked through.
  6. Remove chicken from skillet and place on a wire rack to drain excess oil.
  7. To assemble the sandwich, spread Caesar dressing on both halves of the toasted buns.
  8. Place shredded romaine lettuce on the bottom bun, followed by the crispy chicken breast, and top with shredded Parmesan cheese.
  9. Place the top bun over the Parmesan cheese and serve immediately.

Notes

For an extra kick, add a dash of hot sauce to your Caesar dressing or a sprinkle of red pepper flakes to the breadcrumb mixture.
