Crock Pot Chicken and Rice

A comforting and easy Crock Pot Chicken and Rice recipe that combines tender chicken with flavorful seasoned rice, perfect for a hands-off weeknight dinner.

  • 4 boneless, skinless chicken breasts
  • 1 cup long grain white rice, uncooked
  • 1 1/2 cups chicken broth
  • 1 cup water
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup frozen peas and carrots
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 2 tablespoons olive oil

Instructions

  1. Lightly grease the inside of the crock pot with olive oil.
  2. Place the uncooked rice evenly in the bottom of the slow cooker.
  3. Combine chicken broth and water, then pour over the rice.
  4. Add chopped onion, minced garlic, peas and carrots, salt, pepper, thyme, and paprika; stir gently to combine.
  5. Place the chicken breasts on top of the rice mixture.
  6. Cover and cook on low for 4 to 5 hours, or until the chicken is cooked through and the rice is tender.
  7. About 10 minutes before serving, shred the chicken with two forks and stir it into the rice mixture for even flavor distribution.
  8. Serve warm and enjoy!

Notes

For extra flavor, sprinkle chopped fresh parsley or grated Parmesan cheese over the dish before serving.
