Hearty Crock Pot Crack Potato Soup

This Crock Pot Crack Potato Soup is creamy, comforting, and packed with flavor. It’s an easy, hands-off recipe perfect for busy weeknights.

  • 6 medium Russet potatoes, peeled and cubed
  • 1 (1 ounce) package dry ranch dressing mix
  • 1 (1 ounce) package dry cheddar cheese soup mix
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 6 cups chicken broth
  • 8 ounces cream cheese, softened
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese, for topping
  • 4 slices bacon, cooked and crumbled, for topping
  • Chopped green onions, for topping (optional)

Instructions

  1. Place potatoes, ranch dressing mix, cheddar cheese soup mix, garlic powder, pepper, and chicken broth in a slow cooker.
  2. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until potatoes are very tender.
  3. Use an immersion blender or carefully transfer soup to a regular blender to blend until smooth.
  4. Stir in cream cheese and sour cream until melted and smooth.
  5. Serve hot, topped with shredded cheddar cheese, crumbled bacon, and green onions, if desired.

Notes

For a thicker soup, remove some of the liquid before blending. You can also add more cheese or bacon to suit your taste.
