This Crock Pot Creamy Cajun Chicken Pasta is a flavorful, easy-to-make dinner featuring tender chicken simmered in a creamy, spicy Cajun sauce served over tender pasta. Perfect for busy weeknights when you want comforting Southern-inspired flavors.

  • 1.5 lbs boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 (14.5 oz) can diced tomatoes, drained
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 8 oz penne pasta, uncooked
  • 1 cup shredded Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Rub chicken breasts with Cajun seasoning and set aside.
  2. In a skillet over medium heat, heat olive oil. Sear chicken breasts 2-3 minutes per side until lightly browned.
  3. Place diced onion, minced garlic, and bell peppers into the crock pot.
  4. Place seared chicken breasts on top of the vegetables in the crock pot.
  5. Pour drained diced tomatoes, chicken broth, and heavy cream over the chicken and veggies.
  6. Cover and cook on low for 4-5 hours or on high for 2-3 hours.
  7. Remove chicken breasts from crock pot and shred with two forks.
  8. Add uncooked penne pasta to the crock pot and stir in shredded chicken and Parmesan cheese.
  9. Cover and cook on high for an additional 30-40 minutes until pasta is tender, stirring occasionally.
  10. Season with salt and pepper to taste, garnish with fresh parsley, and serve warm.

Notes

For extra heat, add a pinch of cayenne pepper or use spicy Cajun seasoning. Serve with a side of garlic bread or a fresh green salad.
