Deliciously tender meatballs simmered in a rich, caramelized French onion sauce, made effortlessly in the crock pot for a comforting and flavorful meal.

Ingredients

Scale
  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tsp Worcestershire sauce
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 3 large onions, thinly sliced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tbsp all-purpose flour
  • 2 cups beef broth
  • 1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)
  • 1 tbsp balsamic vinegar
  • 2 cups shredded Swiss cheese

Instructions

  1. In a mixing bowl, combine ground beef, breadcrumbs, Parmesan, egg, garlic, Worcestershire sauce, salt, and pepper. Mix gently until combined and form into 1-inch meatballs.
  2. In a skillet over medium heat, melt butter with olive oil. Add sliced onions and cook slowly until deeply caramelized, about 25-30 minutes, stirring occasionally.
  3. Sprinkle flour over the caramelized onions and stir for 1-2 minutes to cook out the raw flour taste.
  4. Gradually add beef broth while stirring, then add thyme and balsamic vinegar. Let sauce thicken slightly.
  5. Place meatballs in the crock pot and pour the onion sauce over them.
  6. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until meatballs are cooked through and tender.
  7. About 15 minutes before serving, sprinkle shredded Swiss cheese over the meatballs. Cover and let cheese melt.
  8. Serve hot, garnished with additional thyme if desired.

Notes

For an extra touch, serve these meatballs over buttered egg noodles or creamy mashed potatoes to soak up the delicious onion sauce.
