Crockpot Chicken Spaghetti

This Crockpot Chicken Spaghetti is a creamy, comforting dish perfect for busy weeknights, combining tender chicken, tender spaghetti, and a cheesy sauce that simmers to perfection in your slow cooker.

  • 2 cups cooked chicken, shredded
  • 8 oz spaghetti, broken into pieces
  • 1 (10.5 oz) can cream of mushroom soup
  • 1 (10.5 oz) can cream of chicken soup
  • 1 1/2 cups chicken broth
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped onion
  • 2 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Optional: 1/2 cup shredded mozzarella cheese for topping

Instructions

  1. In a crockpot, combine the cooked shredded chicken, cream of mushroom soup, cream of chicken soup, chicken broth, sour cream, cheddar cheese, green bell pepper, onion, garlic, and Italian seasoning.
  2. Stir well until all ingredients are mixed evenly.
  3. Add broken spaghetti pieces to the crockpot, pressing them down slightly into the mixture but do not stir.
  4. Cover and cook on low for 4-5 hours, or on high for 2-3 hours, until pasta is tender.
  5. About 15 minutes before serving, stir the spaghetti gently to combine and top with shredded mozzarella cheese if using; allow cheese to melt.
  6. Adjust seasoning with salt and pepper as needed and serve warm.

Notes

For added freshness, garnish with chopped parsley or green onions before serving. You can also swap spaghetti for rotini or penne pasta for a different texture.
