Crockpot French Dip Sandwiches

Slow-cooked to tender perfection, these Crockpot French Dip Sandwiches feature savory beef and rich au jus served on crusty rolls for a comforting and flavorful meal.

  • 3 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 1 onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste
  • 6 sandwich rolls or French baguette pieces
  • Provolone or Swiss cheese slices (optional)

Instructions

  1. Season the beef chuck roast generously with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat and brown the roast on all sides, about 3-4 minutes per side.
  3. Transfer the roast to the crockpot and add sliced onion, garlic, beef broth, Worcestershire sauce, thyme, and rosemary.
  4. Cover and cook on low for 8 to 10 hours, or until the beef is tender and easily shredded.
  5. Remove the beef from the crockpot and shred using two forks. Return shredded beef to the au jus in the crockpot and stir to combine.
  6. Slice rolls and layer shredded beef on each. Top with cheese if desired, then cover to let cheese melt slightly.
  7. Serve sandwiches warm with a small bowl of the au jus for dipping.

Notes

For extra flavor, add a splash of red wine to the crockpot broth or serve sandwiches with pickled jalapeños for a spicy kick.
