Homemade Crockpot Prime Rib Chili

Transform leftover prime rib into a hearty and flavorful chili with this easy crockpot recipe. It’s the perfect way to enjoy the delicious taste of prime rib in a comforting and satisfying meal.

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 pound leftover prime rib, cubed
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can pinto beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 (4 ounce) can diced green chilies
  • 2 cups beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, green onions

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and bell peppers and cook for another 3 minutes.
  2. Transfer the vegetables to a slow cooker. Add the cubed prime rib, crushed tomatoes, kidney beans, black beans, pinto beans, corn, green chilies, and beef broth.
  3. Stir in chili powder, cumin, smoked paprika, cayenne pepper (if using), salt, and pepper.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until the chili has thickened and the flavors have melded.
  5. Serve hot, topped with your favorite chili toppings, such as shredded cheese, sour cream, and green onions.

Notes

For a spicier chili, add more cayenne pepper or a pinch of red pepper flakes. You can also add other vegetables, such as celery or carrots, to the chili.
