  • 6 flaky croissants, cut into cubes
  • 8 large eggs
  • 2 cups whole milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 pound breakfast sausage, cooked and crumbled
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup diced onions
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, whisk together the eggs, milk, salt, pepper, and paprika.
  3. Spread the cubed croissants evenly in the prepared baking dish.
  4. Sprinkle the cooked sausage, diced onions, and shredded cheddar cheese over the croissants.
  5. Pour the egg mixture evenly over all the ingredients in the dish.
  6. Lightly press the croissants down to help them soak up the egg mixture.
  7. Cover the casserole with foil and refrigerate for at least 1 hour or overnight for best results.
  8. Remove the casserole from the fridge 15 minutes before baking.
  9. Bake covered for 30 minutes, then remove the foil and bake for an additional 15 minutes until the top is golden and the eggs are set.
  10. Let cool for 5 minutes, garnish with chopped parsley if desired, then serve warm.

Notes

For a veggie twist, add diced bell peppers or spinach before baking. Serve with fresh fruit or a light salad for a balanced breakfast.
