  • For the Custard Pie:
  • 1 1/2 cups heavy cream
  • 1 1/2 cups milk
  • 1 vanilla bean, split and scraped (or 1 teaspoon vanilla extract)
  • 6 large egg yolks
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 pre-made or homemade pie crust, unbaked
  • For the Praline Sauce:
  • 1/2 cup (1 stick) unsalted butter
  • 1 cup packed light brown sugar
  • 1/4 cup heavy cream
  • 1/2 cup pecans, chopped
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Make the Custard: Preheat oven to 325°F (160°C). In a saucepan, combine heavy cream, milk, and vanilla bean (if using). Heat over medium heat until just simmering. Remove from heat and let steep for 15-20 minutes. Remove vanilla bean.
  2. In a bowl, whisk together egg yolks, sugar, and salt until pale and slightly thickened. Gradually whisk in the warm cream mixture until combined. If using vanilla extract, add it now.
  3. Pour the custard mixture into the unbaked pie crust. Place the pie on a baking sheet.
  4. Bake for 45-55 minutes, or until the edges are set but the center is still slightly wobbly.
  5. Let the pie cool completely on a wire rack. Refrigerate for at least 2 hours before serving.
  6. Make the Praline Sauce: While the pie is cooling, prepare the praline sauce. In a saucepan, melt the butter over medium heat. Stir in the brown sugar, heavy cream, pecans, and salt.
  7. Bring to a simmer and cook, stirring constantly, for 3-5 minutes, or until the sauce has thickened slightly. Remove from heat and stir in the vanilla extract.
  8. Serve: Slice the cooled custard pie and drizzle with warm praline sauce. Enjoy!

Notes

For a richer flavor, use brown butter in the praline sauce. Serve the pie with a dollop of whipped cream or a scoop of vanilla ice cream.
