Dill Pickle Parmesan Chicken is a tangy and flavorful dish featuring juicy chicken breasts coated in a crisp Parmesan and dill pickle crumb crust, perfect as a tasty weeknight dinner.

  • 4 boneless, skinless chicken breasts
  • 1 cup dill pickle juice
  • 1 cup crushed dill potato chips or crushed dill pickles
  • 3/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 large eggs
  • 2 tablespoons all-purpose flour
  • 2 tablespoons olive oil or vegetable oil

Instructions

  1. Place chicken breasts in a shallow dish and pour dill pickle juice over them. Marinate for at least 30 minutes in the refrigerator.
  2. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  3. In a shallow bowl, combine crushed dill chips, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
  4. In another bowl, beat the eggs. Place flour in a third bowl.
  5. Remove chicken from marinade and pat dry. Dredge each breast lightly in flour, dip into beaten eggs, then coat thoroughly with the Parmesan and dill pickle mixture.
  6. Heat oil in a large skillet over medium-high heat. Sear chicken breasts for 2-3 minutes on each side until golden brown.
  7. Transfer seared chicken to the prepared baking sheet and bake for 15-20 minutes, or until the internal temperature reaches 165°F (74°C).
  8. Remove from oven and let rest for 5 minutes before serving. Garnish with fresh dill if desired.

Notes

For an extra crispy crust, broil the chicken for the last 2 minutes of baking, watching closely to avoid burning.
