Taco Casserole

This Taco Casserole is a hearty and flavorful dish combining seasoned ground beef, crunchy tortilla chips, and melted cheese for a perfect family dinner with a Mexican twist.

  • 1 lb ground beef
  • 1 packet taco seasoning mix
  • 1 cup diced onions
  • 1 cup diced bell peppers
  • 1 (10 oz) can diced tomatoes with green chilies, drained
  • 2 cups tortilla chips, roughly crushed
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sliced black olives (optional)
  • 1/4 cup chopped fresh cilantro
  • 1 cup sour cream (for serving)
  • 1/2 cup sliced jalapeños (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
  3. Add diced onions, bell peppers, and taco seasoning. Cook for 5 minutes until vegetables are soft and beef is well coated.
  4. Stir in diced tomatoes with green chilies and cook for another 2 minutes.
  5. Grease a 9×13 inch baking dish. Layer half of the crushed tortilla chips on the bottom.
  6. Spread the beef mixture evenly over the chips.
  7. Sprinkle half of the shredded cheddar and Monterey Jack cheeses over the beef.
  8. Add remaining crushed tortilla chips as the next layer, then top with the remaining cheese.
  9. Optional: add sliced black olives and jalapeños on top.
  10. Bake uncovered for 20 minutes, until cheese is melted and bubbly.
  11. Remove from oven and let cool slightly before garnishing with fresh cilantro.
  12. Serve warm with sour cream on the side.

Notes

For extra creaminess, dollop sour cream on top before serving or add a layer of refried beans beneath the beef mixture for added protein and texture.
