Delight in these chewy, flourless monster cookies packed with oats, peanut butter, and colorful candy-coated chocolates for a naturally gluten-free, protein-rich treat.

  • 1 cup rolled oats
  • 1/2 cup honey or maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup candy-coated chocolates (e.g., M&Ms)
  • 1/2 cup dark chocolate chips
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine peanut butter, honey, egg, and vanilla extract until smooth.
  3. In a separate bowl, whisk together oats, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture and stir until fully incorporated.
  5. Fold in candy-coated chocolates, dark chocolate chips, and walnuts if using.
  6. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes until cookies are set and edges are lightly golden.
  8. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For extra crunch, lightly toast the oats before mixing, or swap walnuts for pecans to vary the flavor.
