Flourless Yogurt Cake

A light and moist flourless yogurt cake that combines tangy yogurt and sweet honey for a naturally gluten-free dessert perfect for any occasion.

  • 1 1/2 cups Greek yogurt
  • 3 large eggs
  • 1 cup sugar
  • 1/2 cup cornstarch
  • 1/4 cup olive oil
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
  2. In a large bowl, whisk together the eggs and sugar until pale and creamy.
  3. Add the Greek yogurt, olive oil, and vanilla extract; mix until smooth.
  4. Sift in the cornstarch, baking powder, salt, and lemon zest, then gently fold to combine.
  5. Pour the batter into the prepared pan and smooth the surface.
  6. Bake for 35-40 minutes, or until the cake is golden and a toothpick inserted comes out clean.
  7. Allow to cool completely before removing from pan. Serve plain or dusted with powdered sugar.

Notes

For added flavor, serve the cake with fresh berries or a drizzle of honey on top.
