Fresh Lemon Vinaigrette Dressing

A bright and tangy lemon vinaigrette that brings a fresh, zesty flavor to salads and vegetables, perfect for a light and healthy dressing.

Ingredients

  • 1/4 cup fresh lemon juice
  • 1/2 cup extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup
  • 1 small garlic clove, minced
  • Salt and freshly ground black pepper, to taste

Instructions

  1. In a small bowl or jar, combine the lemon juice, Dijon mustard, honey, and minced garlic.
  2. Whisk or shake vigorously while slowly adding the olive oil until the dressing emulsifies.
  3. Season with salt and freshly ground black pepper to taste.
  4. Adjust sweetness or acidity if needed by adding more honey or lemon juice.
  5. Use immediately or refrigerate in an airtight container for up to one week. Shake well before serving.

Notes

For a zestier punch, add a teaspoon of lemon zest or fresh chopped herbs like parsley or basil.
