Frito Cowboy Cabbage is a hearty and flavorful skillet dish combining tender cabbage with crunchy Fritos and savory spices for a satisfying, quick meal.

  • 1 medium head green cabbage, chopped
  • 1 cup Fritos corn chips, crushed
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt and black pepper, to taste
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and cook until translucent, about 3-4 minutes.
  3. Stir in minced garlic, smoked paprika, cumin, and chili powder; cook for 1 minute until fragrant.
  4. Add chopped cabbage to the skillet and sauté until tender, about 8-10 minutes, stirring occasionally.
  5. Season with salt and black pepper to taste.
  6. Remove from heat and gently fold in the crushed Fritos for a crunchy texture.
  7. Garnish with chopped cilantro if desired and serve immediately.

Notes

For extra protein, serve with grilled chicken or black beans. To keep chips crunchier, add them just before serving.
