Fudgy Raspberry Swirl Brownies with Fresh Berries

  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup raspberry jam or preserves
  • 1 cup fresh raspberries
  • 1/2 cup fresh blueberries

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a 9×9 inch baking pan with parchment paper.
  2. Melt the butter in a saucepan over low heat or in the microwave. Remove from heat.
  3. In a large bowl, combine melted butter and sugar. Stir in eggs one at a time, then add vanilla extract.
  4. In a separate bowl, sift together flour, cocoa powder, salt, and baking powder.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Pour half of the brownie batter into the prepared pan and smooth the top.
  7. Dollop spoonfuls of raspberry jam over the batter and gently swirl with a knife to create a marbled effect.
  8. Pour the remaining batter over the swirl and spread evenly.
  9. Bake for 30-35 minutes or until a toothpick inserted near the center comes out with a few moist crumbs.
  10. Cool completely in the pan before topping with fresh raspberries and blueberries.
  11. Cut into squares and serve.

Notes
