This Garlic Cheddar Potato Soup is creamy, comforting, and packed with flavor. The perfect cozy meal for a chilly evening, it’s easy to make and sure to be a family favorite.

Ingredients

  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 medium yellow onion, chopped
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • 6 cups Yukon Gold potatoes, peeled and cubed
  • 4 cups chicken or vegetable broth
  • 1 cup milk or cream
  • 1 cup shredded cheddar cheese, plus more for topping
  • Salt and pepper to taste
  • Optional toppings: sour cream, chopped chives, bacon bits

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add garlic and onion and cook until softened, about 5 minutes.
  2. Stir in thyme and smoked paprika and cook for 1 minute more.
  3. Add potatoes and broth to the pot. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  4. Carefully transfer the soup to a blender (or use an immersion blender) and blend until smooth and creamy.
  5. Return the soup to the pot. Stir in milk or cream and cheddar cheese. Heat until cheese is melted and soup is heated through, but do not boil.
  6. Season with salt and pepper to taste.
  7. Serve hot, topped with additional cheddar cheese, sour cream, chopped chives, or bacon bits, if desired.

Notes

For a richer flavor, use heavy cream instead of milk. You can also add a pinch of red pepper flakes for a little heat.
