Garlic Parmesan Potato Wedges

  • 4 large russet potatoes, cut into wedges
  • 3 tbsp olive oil
  • 4 garlic cloves, minced
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried oregano
  • 1 tsp dried parsley
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the potato wedges with olive oil, minced garlic, salt, and pepper until evenly coated.
  3. Arrange the wedges in a single layer on the prepared baking sheet.
  4. Bake for 25 minutes, flipping halfway through, until wedges are golden and crispy.
  5. Remove from oven and immediately sprinkle Parmesan cheese, oregano, and parsley over the hot wedges.
  6. Toss gently to coat the wedges with cheese and herbs.
  7. Serve warm as a side dish or snack.

Notes

For extra crispiness, soak the potato wedges in cold water for 30 minutes before baking and pat dry thoroughly.
