German Potato Soup

Bowl of hearty German Potato Soup

This hearty German Potato Soup is a comforting and flavorful meal, perfect for a chilly day. Packed with tender potatoes, smoky bacon, and savory broth, it’s a simple yet satisfying dish.

  • 6 slices bacon, diced
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1.5 lbs Yukon Gold potatoes, peeled and cubed
  • 1 teaspoon dried marjoram
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. In a large pot or Dutch oven, cook the bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, reserving the bacon fat in the pot.
  2. Add the onion to the pot and cook in the bacon fat until softened, about 5 minutes. Add the garlic and cook for another minute until fragrant.
  3. Pour in the chicken broth and add the potatoes, marjoram, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.
  4. Use an immersion blender to partially blend the soup until it reaches your desired consistency. Alternatively, you can remove about 2 cups of the soup and blend it in a regular blender before returning it to the pot.
  5. Stir in the heavy cream and cooked bacon. Heat through.
  6. Garnish with fresh parsley and serve hot.

Notes

For a vegetarian version, omit the bacon and use vegetable broth instead of chicken broth. Consider adding a splash of vinegar for a tangy flavor.
