These vibrant Goat Cheese Stuffed Mini Peppers are a simple and delicious appetizer or snack. Sweet mini peppers are filled with creamy goat cheese for a burst of flavor in every bite.

  • 1 pound mini sweet peppers, various colors
  • 4 ounces goat cheese, softened
  • 2 tablespoons cream cheese, softened
  • 1 tablespoon fresh chives, chopped
  • 1/2 teaspoon garlic powder
  • Pinch of red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Wash and dry the mini sweet peppers. Slice each pepper in half lengthwise and remove the seeds.
  2. In a medium bowl, combine the softened goat cheese, cream cheese, chopped chives, garlic powder, and red pepper flakes (if using). Season with salt and pepper to taste.
  3. Mix all ingredients until smooth and well combined.
  4. Fill each mini pepper half with the goat cheese mixture.
  5. Arrange the stuffed peppers on a serving platter.
  6. Serve immediately or chill for later.
