  • 113g unsalted butter
  • 150g granulated sugar
  • 3 large eggs
  • 90g all-purpose flour
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 175°C (350°F) and lightly grease six 6-ounce ramekins.
  2. In a heatproof bowl, melt the chopped chocolate and butter together over a simmering water bath, stirring until smooth.
  3. Remove from heat and whisk in the sugar until well combined.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Sift the flour and salt into the chocolate mixture and gently fold until just combined.
  6. Divide the batter evenly between the prepared ramekins.
  7. Bake for 12-14 minutes until the edges are set but the center remains soft and gooey.
  8. Let cool for 2 minutes, then run a knife around the edges and invert onto dessert plates. Serve immediately.
