  • For the Crust:
  • 1 1/2 cups all-purpose flour
  • 1/2 cup (1 stick) cold unsalted butter, cubed
  • 1/4 cup powdered sugar
  • 1/4 teaspoon salt
  • 3-4 tablespoons ice water
  • For the Filling:
  • 1 cup packed light brown sugar
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1/4 cup corn syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 3 large eggs
  • 2 cups pecan halves, roughly chopped

Instructions

  1. Make the Crust: In a large bowl, whisk together flour, powdered sugar, and salt. Cut in cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  2. Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together.
  3. Press the dough into the bottom of a 9×13 inch baking pan lined with parchment paper, bake at 350°F (175°C) for 15 minutes.
  4. Make the Filling: In a large bowl, whisk together brown sugar, melted butter, corn syrup, vanilla extract, and salt until smooth.
  5. Beat in eggs one at a time until well combined. Stir in chopped pecans.
  6. Pour filling over the pre-baked crust and spread evenly.
  7. Bake for 25-30 minutes, or until the filling is set and golden brown. Let cool completely before cutting into bars.
