Gourmet Mascarpone Strawberry Grilled Cheese with Balsamic Glaze

  • 4 slices sourdough bread
  • 4 tablespoons mascarpone cheese
  • 1 cup fresh strawberries, sliced
  • 2 tablespoons unsalted butter, softened
  • 1/4 cup balsamic vinegar
  • 1 tablespoon honey
  • 2 ounces sharp white cheddar cheese, sliced
  • Fresh basil leaves (optional)
  • Pinch of salt

Instructions

  1. In a small saucepan, combine the balsamic vinegar and honey over medium heat. Simmer for 5-7 minutes until thickened into a glaze. Remove from heat and set aside.
  2. Spread mascarpone cheese evenly on two slices of sourdough bread.
  3. Layer the sliced strawberries, cheddar cheese, and basil leaves (if using) on top of the mascarpone.
  4. Cover with the remaining two bread slices to form sandwiches.
  5. Butter the outside of each sandwich evenly.
  6. Heat a skillet over medium heat and grill the sandwiches until golden brown and cheese is melted, about 3-4 minutes per side.
  7. Remove sandwiches from skillet, slice in half, and drizzle generously with the balsamic glaze before serving.

Notes

For added crunch, sprinkle some toasted walnuts inside the sandwich before grilling. Serve with a fresh green salad for a complete gourmet meal.
