Greek Healing Soup

A nourishing and flavorful Greek-inspired soup packed with wholesome ingredients that comfort and heal, perfect for a healthy meal any day.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 zucchini, chopped
  • 6 cups vegetable or chicken broth
  • 1 cup cooked chickpeas
  • 1 cup cooked brown rice
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and freshly ground black pepper, to taste
  • 3 cups fresh spinach, roughly chopped
  • Juice of 1 lemon
  • 1/4 cup crumbled feta cheese (optional)
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the onion and garlic; sauté until translucent and fragrant, about 5 minutes.
  2. Add carrots, celery, and zucchini. Stir and cook for another 5 minutes until vegetables begin to soften.
  3. Pour in the broth, diced tomatoes, and cooked chickpeas. Stir in oregano, thyme, rosemary, salt, and pepper.
  4. Bring soup to a boil, then reduce heat and simmer for 20 minutes.
  5. Stir in cooked brown rice and fresh spinach. Cook an additional 5 minutes until spinach wilts and soup is heated through.
  6. Remove from heat and stir in lemon juice for a bright finish.
  7. Ladle soup into bowls, garnish with crumbled feta and fresh parsley if desired. Serve warm and enjoy the healing flavors.

Notes

For added protein, serve with grilled chicken or top with toasted pine nuts; a sprinkle of fresh dill also brightens the flavor beautifully.
