Greek Yogurt Pancakes

Fluffy and protein-packed, these Greek Yogurt Pancakes offer a delicious twist on a classic breakfast favorite that’s both nourishing and easy to make.

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup Greek yogurt
  • 2 large eggs
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter or oil

Instructions

  1. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  2. In another bowl, beat the eggs and then mix in the Greek yogurt, honey (or maple syrup), and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients and gently fold together until just combined. Stir in the melted butter.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease if needed.
  5. Pour 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface and edges look set, about 2-3 minutes.
  6. Flip the pancakes and cook for another 1-2 minutes until golden brown and cooked through.
  7. Serve warm with your favorite toppings such as fresh fruit, nuts, or syrup.

Notes

For an extra fluffy texture, let the batter rest for 5 minutes before cooking. You can also add blueberries or chocolate chips to the batter for variation.
