Ground Beef Enchiladas

These Ground Beef Enchiladas are a flavorful Mexican-inspired dish featuring seasoned beef wrapped in tortillas and baked with rich enchilada sauce and melted cheese.

  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup enchilada sauce
  • 8 flour tortillas (6 inch)
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup chopped green chilies (optional)
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • Salt and pepper, to taste
  • 2 tbsp vegetable oil
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat oil in a skillet over medium heat. Add chopped onion and sauté until translucent.
  3. Add garlic and cook for 1 minute until fragrant.
  4. Add ground beef, breaking it up with a spoon. Cook until browned and cooked through.
  5. Stir in cumin, chili powder, salt, pepper, and green chilies. Cook for another 2 minutes.
  6. Pour half of the enchilada sauce into the bottom of a baking dish.
  7. Fill each tortilla with the beef mixture and a sprinkle of cheese, then roll up and place seam-side down in the dish.
  8. Pour remaining enchilada sauce over the rolled tortillas and sprinkle with remaining cheese.
  9. Bake uncovered for 20 minutes or until cheese is melted and bubbly.
  10. Garnish with chopped cilantro before serving.

Notes

For extra flavor, top with sour cream, sliced jalapeños, or diced avocado when serving.
