These Ground Beef Salsa Corn Roll Ups are a flavorful and easy-to-make Mexican-inspired dish featuring seasoned ground beef, zesty salsa, and sweet corn all wrapped in soft tortillas. Perfect for a quick dinner or party appetizer.

  • 1 lb ground beef
  • 1 cup salsa
  • 1 cup canned corn, drained
  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1/2 tsp chili powder
  • 1/2 tsp cumin
  • 1/4 tsp garlic powder
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add ground beef to skillet, season with chili powder, cumin, garlic powder, salt, and pepper. Cook until browned, about 5-7 minutes.
  3. Drain excess fat from the beef if necessary.
  4. Stir in salsa and corn, cook for an additional 2-3 minutes until heated through.
  5. Lay out the tortillas and evenly distribute the beef mixture among them.
  6. Sprinkle shredded cheddar cheese over the beef mixture on each tortilla.
  7. Roll up each tortilla tightly into a roll up.
  8. Optional: Place roll ups seam side down in the skillet and cook for 1-2 minutes per side to crisp slightly and melt cheese.
  9. Garnish with fresh cilantro and serve warm.

Notes

For extra flavor, serve with a dollop of sour cream or guacamole on the side.
