  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened

  • For the Filling:
  • 1 cup shortening
  • 1 cup confectioners’ sugar
  • 1 teaspoon vanilla extract
  • 2-4 tablespoons milk
  • Orange food coloring (optional)
  • Halloween sprinkles

Instructions

  1. Make the Cookies: Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, cream together butter and sugar until light and fluffy. Beat in the egg and vanilla.
  4. Alternately add the dry ingredients and buttermilk to the butter mixture, beginning and ending with the dry ingredients. Beat until just combined.
  5. Drop rounded tablespoons of batter onto the prepared baking sheets.
  6. Bake for 10-12 minutes, or until the tops spring back when lightly touched.
  7. Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
  8. Make the Filling: In a large bowl, beat together shortening, confectioners’ sugar, and vanilla extract until smooth.
  9. Gradually add milk, 1 tablespoon at a time, until desired consistency is reached. Add orange food coloring if desired.
  10. Assemble the Whoopie Pies: Spread a generous amount of filling onto the flat side of one cookie. Top with another cookie, flat side down, to form a sandwich.
  11. Roll the edges of the whoopie pies in Halloween sprinkles.
  12. Serve immediately or store in an airtight container in the refrigerator.

Notes

For a richer chocolate flavor, add 1/2 teaspoon of espresso powder to the dry ingredients. You can also use different colors of food coloring for the filling to create a spooky Halloween theme.
