Hobo Casserole Ground Beef

Hobo Casserole Ground Beef is a hearty, comforting one-pan meal featuring ground beef, potatoes, and vegetables baked to perfection for a quick and delicious dinner.

  • 1 lb ground beef
  • 4 medium potatoes, peeled and diced
  • 1 cup frozen mixed vegetables (corn, peas, carrots)
  • 1 small onion, diced
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup milk
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add diced onions and minced garlic; sauté until translucent.
  3. Add ground beef to the skillet, breaking it apart with a spatula. Cook until browned and no longer pink. Drain excess fat.
  4. In a large mixing bowl, combine diced potatoes, mixed vegetables, cream of mushroom soup, milk, salt, pepper, and paprika. Mix well.
  5. Add the cooked ground beef and onions to the potato mixture and stir until evenly combined.
  6. Transfer the mixture to a greased 9×13-inch baking dish and spread evenly.
  7. Sprinkle shredded cheddar cheese over the top.
  8. Bake uncovered for 45-50 minutes until potatoes are tender and cheese is melted and golden.
  9. Remove from oven and let stand for 5 minutes before serving.

Notes

For extra flavor, try adding a dash of Worcestershire sauce to the beef while cooking or topping with crispy fried onions just before serving.
