Ingredients

Scale
  • 1 lb fresh green beans, trimmed and cut into 2-inch pieces
  • 2 tablespoons unsalted butter
  • 8 oz mushrooms, sliced
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups crispy fried onions

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Bring a large pot of salted water to a boil. Add green beans and cook for 3–4 minutes until tender-crisp. Drain and set aside.
  3. In a large skillet, melt butter over medium heat. Add onions and garlic; sauté until softened, about 3 minutes.
  4. Add mushrooms and cook until they release their moisture and begin to brown, about 5 minutes.
  5. Sprinkle flour over the mushroom mixture and stir to coat. Cook for 1 minute to remove the raw flour taste.
  6. Gradually whisk in chicken broth and then heavy cream. Cook, stirring frequently, until sauce thickens, about 4–5 minutes.
  7. Season sauce with salt and black pepper. Remove from heat.
  8. In a baking dish, combine the cooked green beans with the mushroom sauce. Mix well.
  9. Top casserole evenly with crispy fried onions.
  10. Bake in preheated oven for 20–25 minutes until bubbly and golden on top.
  11. Remove from oven and let rest for 5 minutes before serving.

Notes

For an extra savory touch, stir in 1/2 cup shredded cheddar cheese before baking or add fresh thyme for herbal flavor.
