Huevos Rancheros

Huevos Rancheros is a classic Mexican breakfast featuring crispy tortillas topped with fried eggs and a vibrant tomato-chili sauce, perfect for a hearty start to your day.

  • 2 corn tortillas
  • 2 large eggs
  • 1 cup fresh salsa (tomato, onion, chili, cilantro)
  • 1/4 cup refried beans
  • 1/4 cup shredded cheddar or queso fresco
  • 1 tablespoon vegetable oil
  • 1/4 avocado, sliced
  • Fresh cilantro for garnish
  • Salt and pepper, to taste

Instructions

  1. Heat the vegetable oil in a skillet over medium heat.
  2. Lightly fry the corn tortillas until crispy but still pliable, about 1-2 minutes per side. Set aside on paper towels.
  3. In the same skillet, fry the eggs sunny side up, seasoning with salt and pepper.
  4. Warm the refried beans until heated through.
  5. To assemble, spread refried beans on each tortilla, then top each with a fried egg.
  6. Spoon fresh salsa over the eggs, then sprinkle with shredded cheese.
  7. Garnish with avocado slices and fresh cilantro.
  8. Serve immediately and enjoy.

Notes

For an extra kick, add sliced jalapeños or a dash of hot sauce. You can also substitute corn tortillas with flour ones if preferred.
