Hearty Irish Potato Pie

This Irish Potato Pie is a delicious and comforting dessert, reminiscent of a classic custard pie but with a subtle potato flavor. It’s a perfect way to celebrate Irish heritage or simply enjoy a unique and satisfying treat.

  • 1 1/2 cups mashed cooked potatoes (russet or Yukon gold)
  • 1 1/2 cups granulated sugar
  • 1/2 cup melted butter
  • 4 large eggs
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 (9-inch) pie crust, pre-made or homemade

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine mashed potatoes, sugar, and melted butter. Mix well until smooth.
  3. In a separate bowl, whisk eggs, cinnamon, nutmeg, cloves, and salt.
  4. Add the egg mixture to the potato mixture and stir until well combined. Stir in vanilla extract.
  5. Pour the filling into the prepared pie crust.
  6. Bake for 45-50 minutes, or until the filling is set and the crust is golden brown. A knife inserted near the center should come out clean.
  7. Let the pie cool completely before slicing and serving.

Notes

For an extra touch, dust the top of the pie with powdered sugar or serve with a dollop of whipped cream.
