  • 1 pound Italian sausage, removed from casings
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 medium potatoes, peeled and cubed
  • 1 cup heavy cream
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot or Dutch oven, brown the Italian sausage over medium-high heat. Drain off any excess grease.
  2. Add the chopped onion and minced garlic to the pot. Cook until the onion is softened, about 5 minutes.
  3. Pour in the chicken broth and diced tomatoes. Stir in the Italian seasoning, salt, and pepper.
  4. Bring the mixture to a boil, then reduce heat and simmer for 10 minutes.
  5. Add the cubed potatoes to the pot. Continue to simmer until the potatoes are tender, about 15-20 minutes.
  6. Stir in the heavy cream and heat through. Do not boil.
  7. Garnish with fresh parsley before serving.

Notes

For a spicier kick, use hot Italian sausage. You can also add a handful of chopped spinach or kale during the last few minutes of cooking for added nutrients.
