Jalapeno Cheddar Protein Bagels with Greek Yogurt Salsa

These Jalapeno Cheddar Protein Bagels combine spicy kick and cheesy flavor with a wholesome boost of protein, perfectly complemented by a refreshing Greek yogurt salsa for a delicious and nutritious snack or breakfast.

  • 1 1/2 cups whole wheat flour
  • 1/2 cup unflavored protein powder
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1 cup shredded sharp cheddar cheese
  • 1 jalapeno, finely diced (seeds removed for less heat)
  • 1/2 cup Greek yogurt
  • 1 small tomato, diced
  • 2 tbsp chopped fresh cilantro
  • 1 tbsp lime juice
  • 1/2 tsp garlic powder
  • 1/2 cup warm water
  • 1 tbsp olive oil (for dough)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine whole wheat flour, protein powder, salt, and baking powder.
  3. Add shredded cheddar cheese and diced jalapeno to the dry ingredients; mix well.
  4. Stir in warm water and olive oil to form a dough. Knead lightly until combined.
  5. Divide dough into 6 equal parts and shape each into a bagel by forming a ball and poking a hole through the center.
  6. Place bagels on the prepared baking sheet and bake for 20-25 minutes, until golden brown and cooked through.
  7. While bagels bake, prepare the Greek yogurt salsa by mixing Greek yogurt, diced tomato, chopped cilantro, lime juice, and garlic powder in a small bowl.
  8. Serve bagels warm with a generous dollop of Greek yogurt salsa on top or on the side.

Notes

For extra heat, leave some jalapeno seeds in or add a dash of hot sauce to the yogurt salsa. These bagels are great toasted with avocado spread as well.
