  • 1 tablespoon olive oil
  • 1 pound kielbasa sausage, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 pound Yukon gold potatoes, peeled and cubed
  • 1 cup milk or half-and-half
  • 1/2 cup shredded cheddar cheese, optional
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add kielbasa and cook until browned, about 5-7 minutes. Remove kielbasa from the pot and set aside.
  2. Add onion to the pot and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more, until fragrant.
  3. Pour in chicken broth and bring to a simmer. Add potatoes and cook until tender, about 15-20 minutes.
  4. Return kielbasa to the pot.
  5. Stir in milk or half-and-half and heat through. Do not boil.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with shredded cheddar cheese and fresh parsley, if desired.

Notes

For a richer flavor, use smoked kielbasa. You can also add other vegetables like carrots or celery to the soup. Top with sour cream or a dollop of plain yogurt for extra creaminess.
