Lasagna Soup captures all the flavors of classic lasagna in a warm, comforting bowl of soup, featuring Italian sausage, tomatoes, noodles, and melted cheese.

  • 1 tablespoon olive oil
  • 1 pound Italian sausage, casing removed
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 (28-ounce) can crushed tomatoes
  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 8 ounces lasagna noodles, broken into bite-size pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • Fresh basil leaves, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add Italian sausage and cook until browned, breaking it up with a spoon.
  2. Add diced onion and garlic to the pot and sauté until softened, about 3-4 minutes.
  3. Pour in chicken broth and crushed tomatoes. Stir in dried basil, oregano, salt, and pepper.
  4. Bring the soup to a boil, then reduce heat and simmer for 15 minutes to meld flavors.
  5. Add broken lasagna noodles and cook for an additional 8-10 minutes, until noodles are tender.
  6. Ladle soup into bowls. Top each serving with a spoonful of ricotta cheese, a sprinkle of mozzarella, and Parmesan.
  7. Garnish with fresh basil leaves and serve hot.

Notes

For a vegetarian version, replace sausage with sautéed mushrooms or extra vegetables. Serve with crusty garlic bread for a complete meal.
