This moist and zesty Lemon Bread combines fresh lemon juice and zest with a tender crumb, making it a perfect treat for breakfast or an afternoon snack.

  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1/2 cup whole milk
  • 1/4 cup fresh lemon juice
  • 2 tablespoons lemon zest
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream the butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in lemon juice, lemon zest, and vanilla extract.
  5. Gradually add the dry ingredients alternately with the milk, mixing until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the bread to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely before slicing.

For an extra tangy finish, drizzle a simple lemon glaze made with powdered sugar and fresh lemon juice over the cooled bread.
